Chef de Partie

Crofters Arran is a cosy wee bistro on the Isle of Arran, specialising in locally sourced ingredients, home-cooked food, Scottish Craft Beers and Spirits, and Cocktails. We are a close knit, family run establishment specialising in Scottish provenance and authentic hospitality, and we have earned a reputation for being quirky, innovative, entertaining and welcoming with a commitment to providing imaginative vegetarian, vegan and gluten free dishes alongside the very best of local produce, Scottish meats and seafood. We are currently looking for a Chef de Partie to play a vital part of our kitchen team. The ideal candidate will have experience within a busy bistro environment. A bright, confident character with a sense of humour is vital (UK work visa or citizenship required) with a "can do" attitude. References to demonstrate ability to work under own initiative within busy, high-pressure environments are crucial.  This is a full-time, permanent position with the potential for extension, training and progression for the right candidate, and we expect the role to start in mid May.

  • Ensure the adequacy of supplies at the cooking stations; monitoring portion and waste control. 

  • Prepare, cooking and presenting high quality dishes within the various sections. 

  • Follow the guidance of the executive or sous chef and have input in new ways of presentation or dishes. 

  • Put effort in optimizing the cooking process with attention to speed and quality. 

  • Managing and training any Commis Chefs or kitchen assistants 

  • Ensuring the strict maintenance of health, hygiene and food safety standards  

  • Help to maintain a climate of smooth and friendly cooperation. 






Person Specification: 


  • Minimum of two years' experience in a Chef de Partie role 

  • Excellent use of various cooking methods, ingredients, equipment and processes 

  • Ability to multitask and work efficiently under pressure. 

  • Knowledge of best cooking practices 

  • Team management skills and Team player qualities 

  • High level of energy and attention to detail, as well as a good level of numeracy and IT skills. 

  • Enthusiasm to develop your own skills and knowledge plus those around you.  

  • Adaptability to change and willingness to embrace new ideas and processes.  

  • Positive and approachable manner  

  • Own transport if required. 



  • Filleting & Butchery skills 

  • First Aid / Health & Safety qualifications.
